			<content:encoded><![CDATA[<p>I once saw a cooking tv show where they simulated the taste of white wine using grape juice and some other stuff.  Unfortunately, i cant find the recipe for it.  I was hoping someone here knows how to make alcohol-free white wine, to make my cooking healthy and tasty even for kids.<br />
<br />You can buy it at your local supermarket, unless you simply prefer to make it yourself.  </p>
<p>If so, just buy a bottle of white wine that has the flavors you are looking for, pour it into a large cooking pot and simmer lightly for an hour or two.  It will smell awful for a while because it will be evaporating the ethanol (alcohol) in the wine.  Once that smell has gone away, you know the ethanol has evaporated out.  This works because ethanol has a lower boiling temp than water so it will boil out first.  Make sure you do not cook it at too high of a temp or it will cook the desired flavors of the wine.</p>
<p>Also remember that when you cook with wine, the alcohol cooks out.  So your end result is alcohol-free.</p>

			<content:encoded><![CDATA[<p>I usually drink white wine but was given a bottle of red recently as a present.  I didn&#8217;t like to offend so I&#8217;ve been using it in cooking rather than pour it down the sink, but yesterday I had a glass with my dinner, I should have know better.</p>
<p>I can eat red grapes and even drink red grape juice with no ill effect, so why does turning them into wine make a difference.  Is it just a chemical process that occurs in the making of wine?<br />
<br />Tannins.  These occur in the grape must (skin) in reasonable quanities (also in the flesh and seeds to lesser degrees).  These give the red wine its colour, and give you that &quot;drying&quot; sensation if the wine is young or rough.  Tannins produce histamines, which are what gives the &quot;allergic reaction&quot; &#8211; people with athsma or hayfever mayfind themselves more succeptible to tannins too.  </p>
<p>Try an asprin and lots of water next time.  Or see your doctor &#8211; s/he may reccommend a course of antihistamines if you really want to drink reds.</p>
<p>Some people have a reaction to the sulphur in wines, which is a natural preservative, although if you are drinking whites as well, I would suggest it&#8217;s the tannins.</p>

Ingredients

<br />Chicken &amp; broccoli in white wine sauce</p>
<p>Ingredients</p>
<p>      1 lb Chicken Breast, diced<br />
      1.5 Tbsp EVOO<br />
      .5 c onion, diced<br />
      Broccoli, frozen, 1 package (10 oz)<br />
      .5 c White Wine<br />
      1.5 c low sodium low fat chicken broth<br />
      Salt, 0.5 tsp<br />
      Pepper, black, 0.25 tsp<br />
      Poultry seasoning, 0.5 tsp<br />
      1.5 Tbsp cornstarch<br />
      4 c Brown rice pasta (or other pasta/rice of choice) </p>
<p>Directions<br />
1. Cook pasta or rice as directed<br />
2. heat EVOO, season diced chicken with S&amp;P &amp; poultry seasoning (or other seasoning of choice, I also like italian seasoning). Cook until chicken is nice &amp; brown<br />
3. add diced onion and thawed broccoli to pan with chicken, saute for a few minutes<br />
4. Add white wine and 1 cup of chicken broth, cook until liquid is simmering.<br />
5. mix the cornstarch with the remaining .5 c chicken stock, add to chicken mixture. Stir frequently until sauce has thickened.<br />
6. Serve over pasta/rice<br />
Number of Servings: 4</p>
<p>Note : EVOO is Extra Virgin Olive Oil,<br />

   Pasta with Chicken and Broccoli in White Wine Cheddar Sauce</p>
<p>  Ziti with Chicken and Broccoli in White Wine Cheddar Sauce</p>
<p>Ingredients:<br />
8 oz. ziti or other tube pasta<br />
1 ½ tbsp. butter<br />
¼ cup roasted garlic paste (see directions below)<br />
1 ½ tbsp. flour<br />
¼ cup dry white wine<br />
1 cup chicken broth<br />
2 cups fresh broccoli florets, blanched or steamed until tender<br />
1 boneless, skinless chicken breast, grilled and cut into bite-sized pieces<br />
¾ cup shredded white cheddar cheese<br />
salt and pepper</p>
<p>Directions:<br />
To make the garlic paste, roast 2-3 heads of garlic.  When cool, squeeze the cloves out of the skin into a bowl.  Mash with a fork.</p>
<p>Bring a large pot of water to boil and cook pasta until al dente.</p>
<p>Meanwhile, melt the butter in a large skillet over medium heat.  When just starting to foam, add the garlic paste and cook until fragrant, about 1 minute.  Add the flour to the skillet and cook until beginning to turn golden, about 2 minutes.  Add the wine and cook until evaporated, about 1 minute.  Stir the broth into the pan and simmer the sauce until slightly thickened, about 2 minutes.  Add the cheddar and stir constantly while returning to a boil.  Season with salt and pepper to taste.</p>
<p>Fold in the pasta, chicken and broccoli and stir until the sauce covers uniformly.  Plate and top with shaved Parmesan, if desired.<br />

Is this from the dye?<br />
<br />It is not due to the red wine but the alcohol in the wine. Any alcoholic drink will cause the pancreas to increase bile output. This greenish digestive fluid turns the stool deep brown to black and contributes along with reduced hydration to a tar-like consistency of the stool.</p>

Hope someone out there knows the sublime vine &amp; its problems.<br />
<br />If you suspect a plant disease (because you will know if it has be adequately watered etc.) the best thing you could probably do is find a local university that has a plant disease diagnostic clinic. If it is pathogen related they will be able to tell you what would be the most effective spray for you to use. They will usually have a website that explains the price and how they want their samples submitted. Good luck with your vine I hope you can save it.</p>

			<content:encoded><![CDATA[<p>I am making a white wine sauce to go with chicken sausage, penne, and broccoli florets.  I know there is a receipe that includes the following ingredients: Dry White Wine, Flour, Chicken Broth, Olive Oil, Salt &amp; Pepper.  However, i can&#8217;t find this exact recipe, so I don&#8217;t know how much of each ingredient to put in.  (These are the only ingredients I have at home, and need to make this sauce quickly). Anybody know the exact recipe?<br />
<br />Makes 5 to 6 cups</p>
<p>1/2 cup extra virgin olive oil<br />
1/2 cup unbleached white flour<br />
1 cup dry white wine<br />
4 cups chicken broth<br />
Salt and freshly ground black pepper to taste (see note)</p>
<p>Pour the olive oil into a 4- to 5-quart saucepan over medium heat, then add the flour and stir with a wire whisk until all the flour is dissolved and the mixture looks like a paste. Reduce the heat and slowly add the wine; the mixture will start to thicken quickly. Continue to stir and remove from the heat, if necessary, until all the wine has been mixed in. Slowly pour in the chicken broth while you continue to stir. Simmer, uncovered, for approximately 1 hour, or until the taste of alcohol is no longer present in the sauce. Freeze in containers of various sizes, including some in an ice-cube tray to allow easy small additions to sauces. It can stay in the freezer for 6 months or more.</p>
<p>NOTE: Be sparing with the salt and pepper. It’s better to underseason this sauce, because you will season it again in the sauté pan.</p>
<p>NOTE: If this (or any) sauce ever has lumps caused by undissolved flour, just pass the sauce through a sieve or a mesh strainer. It will come out lump-free.</p>

<p>Red wine is usually made from red or black grapes, although all the kinds of grapes usually have a clear juice. The process of making red wine is different from the one of making white wine. After the grapes have been in the crushing machine, the red grapes with their skins and everything sit in a fermentation vat for a period of time, typically about one to two weeks. . The skins tend to rise to the surface of the mixture and form a layer on top. The winemaker frequently mixes this layer back into the fermenting juice (which is called must). After fermentation is over, the new wine is taken from the vat.</p>
<p>The main difference between red and white wines is the amount of tannins they have. Since tannins largely come from the grape skins, red wines have more of them than white wines.</p>
