Or just have a nice but simple recipe. It’s a semi-clear sauce made with white wine. No heavy flavor or anything really just the flavors from the chicken and broccoli mostly. It’s usually served with a side of rice and not spicy at all.
Chicken & broccoli in white wine sauce
Ingredients
1 lb Chicken Breast, diced
1.5 Tbsp EVOO
.5 c onion, diced
Broccoli, frozen, 1 package (10 oz)
.5 c White Wine
1.5 c low sodium low fat chicken broth
Salt, 0.5 tsp
Pepper, black, 0.25 tsp
Poultry seasoning, 0.5 tsp
1.5 Tbsp cornstarch
4 c Brown rice pasta (or other pasta/rice of choice)
Directions
1. Cook pasta or rice as directed
2. heat EVOO, season diced chicken with S&P & poultry seasoning (or other seasoning of choice, I also like italian seasoning). Cook until chicken is nice & brown
3. add diced onion and thawed broccoli to pan with chicken, saute for a few minutes
4. Add white wine and 1 cup of chicken broth, cook until liquid is simmering.
5. mix the cornstarch with the remaining .5 c chicken stock, add to chicken mixture. Stir frequently until sauce has thickened.
6. Serve over pasta/rice
Number of Servings: 4
Note : EVOO is Extra Virgin Olive Oil,

Pasta with Chicken and Broccoli in White Wine Cheddar Sauce
Ziti with Chicken and Broccoli in White Wine Cheddar Sauce
Ingredients:
8 oz. ziti or other tube pasta
1 ½ tbsp. butter
¼ cup roasted garlic paste (see directions below)
1 ½ tbsp. flour
¼ cup dry white wine
1 cup chicken broth
2 cups fresh broccoli florets, blanched or steamed until tender
1 boneless, skinless chicken breast, grilled and cut into bite-sized pieces
¾ cup shredded white cheddar cheese
salt and pepper
Directions:
To make the garlic paste, roast 2-3 heads of garlic. When cool, squeeze the cloves out of the skin into a bowl. Mash with a fork.
Bring a large pot of water to boil and cook pasta until al dente.
Meanwhile, melt the butter in a large skillet over medium heat. When just starting to foam, add the garlic paste and cook until fragrant, about 1 minute. Add the flour to the skillet and cook until beginning to turn golden, about 2 minutes. Add the wine and cook until evaporated, about 1 minute. Stir the broth into the pan and simmer the sauce until slightly thickened, about 2 minutes. Add the cheddar and stir constantly while returning to a boil. Season with salt and pepper to taste.
Fold in the pasta, chicken and broccoli and stir until the sauce covers uniformly. Plate and top with shaved Parmesan, if desired.
