		<description>I am a former chef and alot of time it was what ever we got from the bar to cook with, but if I was doing with my kitchen stock, I used Madeira, a cream sherry is nice, but plain old red or white wine is fine also, just make sure to cook out the alcohol.

For the duxelle mushrooms I would use Madeira, but for a sauce to serve with it, a red wine sauce similar to bordelaise or even a marrow sauce.&lt;br&gt;&lt;b&gt;References : &lt;/b&gt;&lt;br&gt;</description>

Use the wine to deglaze the juices from the bottom of the pan after you have sauteed the meat.  Once you have placed the meat on the puff pastry, pour the juices on to the beef wellington and pour the sauce on top of the meat prior to adding the pate on top of the meat.
